Romanesco broccoli 750 g in florets -
fine salt 2 Liffo spoons -
pitted green olives 80 g halved -

Romanesco is the one with the spiralling points, more delicate than cauliflower and with a hazelnut note that stands up to the anchovies. The anchovies melt into the oil and become the base: you don't taste them as fish, but they are what holds the capers and olives together. Setting up Liffo

In the first container put 25 g of extra virgin olive oil, 6 fillets of anchovies in oil, in small pieces and 1 clove of fresh garlic, unpeeled.

In the second container put 130 g of Romanesco broccoli, in florets.
