Sicilian caponata is a sweet and sour vegetable dish eaten at room temperature, and it is better the day after: the rest lets vinegar, sugar and vegetables find one another. The aubergines must cook until they give way completely, because their softness is what gives the dish its texture. But enough talking — let's go straight to loading the ingredients into Liffo!
Setting up Liffo

In the first container put 45 g of extra virgin olive oil, 120 g of celery, in small dice and 80 g of white onions, sliced.

In the second container put 150 g of fresh tomatoes, in small dice, 60 g of pitted green olives, halved, 30 g of desalted salted capers and 25 g of pine nuts, whole.

In the third container put 160 g of aubergines, in large dice.
Container 4
In the fourth container put 160 g of aubergines, in large dice.

In the fifth container put 160 g of aubergines, in large dice.

In the sixth container put 50 g of water, 30 g of white wine vinegar, 15 g of white sugar, 15 g of tomato paste and 3 Liffo spoons of fine salt.

Tips
Prefer firm eggplants, long black or round violet ones. Use fresh tomatoes suitable for cooking such as San Marzano or cluster varieties. You can also add soaked raisins, placing them in the container together with capers and olives. Pine nuts can be replaced by coarsely chopped almonds. Nuts, if lightly toasted before being added to the container, gain crunchiness and a stronger flavor.
Plating
Garnish the dish with fresh basil leaves and a sprinkle of black pepper. It is also great warm or cold, ideal as a side dish or alternatively to accompany white rice, to season bruschetta or to fill a sandwich with medium-aged cheese or chickpea hummus.
