Rabbit is a lean meat, and that is both its virtue and its difficulty: cooked badly it dries out fast. The sauce is not just seasoning but protection — it keeps the meat moist while it cooks gently, until it falls off the bone on its own. But enough talking — let's go straight to loading the ingredients into Liffo!
