Ingredients

for 4 servings

  • extra virgin olive oil 40 g
  • fresh parsley 20 g chopped
  • fresh garlic 2 cloves chopped
  • dried chilli 1 pinch
  • dry white wine 100 g
  • fresh mussels in the shell 1000 g

Mussels need almost nothing: they open in their own liquor, which is already salty and savoury enough. The wine is there to temper that and to build a broth worth mopping up with bread. But enough talking — let's go straight to loading the ingredients into Liffo!

Setting up Liffo

Container 1

In the first container put 40 g of extra virgin olive oil, 20 g of fresh parsley, chopped, 2 cloves of fresh garlic, chopped and 1 pinch of dried chilli.

Container 2

In the second container put 100 g of dry white wine.

In the third container put 200 g of fresh mussels in the shell.

Nel terzo contenitore mettete 200 g di cozze fresche con guscio.

In the fourth container put 200 g of fresh mussels in the shell.

Nel quarto contenitore mettete 200 g di cozze fresche con guscio.

Container 5

In the fifth container put 200 g of fresh mussels in the shell.

Nel quinto contenitore mettete 200 g di cozze fresche con guscio.

Container 6

In the sixth container put 200 g of fresh mussels in the shell.

Nel sesto contenitore mettete 200 g di cozze fresche con guscio.

Container 7

In the seventh container put 200 g of fresh mussels in the shell.

Nel settimo contenitore mettete 200 g di cozze fresche con guscio.

Tips

Use fresh shell mussels. Clean the mussels from the filament and rinse them with cold running water before putting them in the containers.

Plating

Season as you like with ground black pepper and chopped fresh parsley. Serve with slices of toasted bread, ideal for collecting the sauce.
