Ingredients

  • extra virgin olive oil 40 g
  • fresh garlic 3 cloves unpeeled
  • chopped tomatoes 400 g
  • black pepper 2 pinches
  • fresh mussels in the shell 1000 g

Mussels bring their own seawater, and that is already half the seasoning: as they open they release it into the tomato and make it savoury without any need for salt. That is why they go in last and cook briefly — the moment they open is also the moment they are done. But enough talking — let's go straight to loading the ingredients into Liffo!

Setting up Liffo

In the first container put 40 g of extra virgin olive oil and 3 cloves of fresh garlic, unpeeled.

Tips

Use fresh mussels with shells; clean them from the filament and rinse with cold running water before placing them in the containers.

Plating

Remove the garlic cloves. Season to taste with ground black pepper and chopped fresh parsley. Serve with slices of toasted bread drizzled with extra virgin olive oil, ideal for soaking up the sauce.
