brewed coffee 80 g -
fresh whole cow's milk 50 g -

Ricotta is not a cheese but a salvage: it is made by re-cooking the whey left over from cheesemaking, and that is where its name comes from. Its light acidity is what keeps this dessert from cloying the way a custard would, and the coffee adds the bitterness that closes each mouthful. Setting up Liffo
Container 1
In the first container put 260 g of fresh cow's ricotta, in spoonfuls.
Container 2
In the second container put 240 g of fresh cow's ricotta, in spoonfuls.
Container 3
In the third container put 60 g of white sugar.
Container 4
In the fourth container put 80 g of brewed coffee, 50 g of fresh whole cow's milk and 1 tablespoon of rum.
Container 5
In the fifth container put 120 g of shortbread biscuits, crumbled and 50 g of chocolate chips.

Tips
Prefer fresh creamy cow ricotta with little graininess. Chocolate chips can be replaced with chocolate pieces, better if dark. Use liquid coffee and dose the rum to taste. Use cookies like shortbread (such as macine), avoiding very alveolate, flaky or filled cookies.
Plating
Once ready, refrigerate the mixture to set for at least 4 hours.
