Ingredients

  • extra virgin olive oil 25 g
  • fresh garlic 1 clove unpeeled
  • green beans 400 g halved
  • fine salt 2 Liffo spoons

Sea bream is lean and firm and asks for little: garlic, lemon, and the right timing. The green beans cook first and separately because their timing is nothing like the fish, which comes off the heat the moment the flesh lifts from the bone. But enough talking — let's go straight to loading the ingredients into Liffo!

Setting up Liffo

Container 1

In the first container put 25 g of extra virgin olive oil and 1 clove of fresh garlic, unpeeled.

In the sixth container put 40 g of gilt-head bream, in large dice, 25 g of lemon juice and 0.5 units of lemon zest, grated.

Nel sesto contenitore mettete 40 g di orata a dadini grandi, 25 g di succo di limone e 0.5 unità di scorze di limone grattugiate.

Tips

Prefer fresh sea bream weighing 400-600 g. Use the fillets and cut them lengthwise in two. It is suggested to keep the skin scaled and attached to the fillet so that it does not fall apart during cooking. Use lemon with edible peel.

Plating

Season to taste with a drizzle of extra virgin olive oil, served raw, and basil leaves. Excellent as a main course paired with potatoes, white rice, or other whole grains.
