fresh whole cow's milk 130 g -
vanilla 1 pod -
white sugar 100 g -
water 40 g -
leaf gelatine 8 g in small pieces

Panna cotta means exactly what it says: cream brought just to the edge of a boil with sugar and vanilla, then set with gelatine. The amount of gelatine is everything — too much and it turns rubbery, too little and it won't stand — and the right set is the one that wobbles when you move the plate. But enough talking — let's go straight to loading the ingredients into Liffo!
Setting up Liffo
Container 1
In the first container put 300 g of fresh cream, 130 g of fresh whole cow's milk and 1 pod of vanilla.
Container 2
In the second container put 100 g of white sugar.
Container 3
In the third container put 40 g of water and 8 g of leaf gelatine, in small pieces.

Liffo needs 18 minutes of cooking for this dish.
Tips
Ideal unsweetened fresh cream (whipping cream). Make a vertical incision with a rounded-tip knife on the pod, extract the seeds and leave the whole pod to cook with the milk. Alternatively use powdered or liquid essence. Vanilla can be substituted with other spices or flavors (orange blossom water; lemon essence; essence as you like).
Plating
Remove the vanilla pod before portioning. Portion the mixture into single-serving cups or glasses and refrigerate for at least 4 hours. If you prefer to serve in a single mold, pour the mixture into the container and let it set in the freezer overnight; once frozen, remove the mixture from the mold and let it thaw in the refrigerator. Serve the panna cotta paired with fresh red fruits, chocolate or caramel sauces, fruit preserves.
