Curry with apple is a nineteenth-century Anglo-Indian invention, made to soften the spices for British palates, and from there it reached Europe. The apple breaks down as it cooks and becomes part of the sauce: you no longer find pieces, only the sweetness. But enough talking — let's go straight to loading the ingredients into Liffo!
Setting up Liffo
Container 1
In the first container put 25 g of extra virgin olive oil and 40 g of yellow onions, chopped.
Container 2
In the second container put 5 g of extra virgin olive oil and 260 g of chicken, in medium dice.
Container 3
In the third container put 5 g of extra virgin olive oil and 280 g of chicken, in medium dice.
Container 4
In the fourth container put 5 g of extra virgin olive oil, 260 g of chicken, in medium dice, 4.5 Liffo spoons of fine salt and 1.5 teaspoons of curry powder, ground.
Container 5
In the fifth container put 150 g of apples, in small dice and 1 teaspoon of cornstarch.
Container 6
In the sixth container put 100 g of fresh cream.

Tips
Prefer chicken breast or thigh, a cut that remains more tender when cooked. Season the chicken pieces with oil, salt and curry before placing them in the containers. Prefer apple varieties with firm flesh and a slightly acidic taste, such as Granny Smith or Pink Lady. Prefer fresh cooking cream (unsweetened); alternatively cooking cream that may be a little thicker, in which case dilute it with a drop of water. As a variant, it is possible to replace cream with thick coconut milk, in equal quantities.
Plating
It is recommended to serve accompanied by white basmati rice or bread such as naan or Arabic bread.
