«Alla cacciatora» describes a way of cooking rather than a fixed recipe: braised, with whatever you came back from the hunt with. That is why it changes from region to region — some add tomato, some don't; some use white wine, some red. What doesn't change is the slow cooking, which leaves the meat tender enough to fall from the bone. But enough talking — let's go straight to loading the ingredients into Liffo!
Setting up Liffo
Container 1
In the first container put 25 g of extra virgin olive oil, 50 g of yellow onions, chopped, 40 g of celery, in small dice, 2 cloves of fresh garlic, unpeeled and 1 sprig of fresh rosemary, whole.
Container 2
In the second container put 5 g of extra virgin olive oil, 300 g of boneless chicken thigh, in medium dice, 2 pinches of black pepper and 1 pinch of dried chilli, whole.
Container 3
In the third container put 5 g of extra virgin olive oil and 300 g of boneless chicken thigh, in medium dice.
Container 4
In the fourth container put 80 g of still red wine.
Container 5
In the fifth container put 400 g of peeled tomatoes, quartered and 3 Liffo spoons of fine salt.

Tips
Juicy cuts work best, such as boneless chicken thigh, rather than breast, which is leaner and can turn fibrous. The peeled tomatoes can be replaced by chopped tomatoes, in the same quantity.
Plating
Remove the rosemary sprig and the garlic cloves. Finish with a sprinkling of chopped fresh parsley. Excellent with bread, white rice, potatoes or polenta, and a side of seasonal vegetables.
