A summer, rich and colorful side dish.
Ingredients

extra virgin olive oil 40 g -
yellow onions 100 g coarsely chopped -
fresh thyme 8 sprigs -
fresh garlic 2 cloves chopped -
peppers 220 g in large dice -
courgettes 220 g in large dice -
aubergines 250 g in large dice -
peeled tomatoes 200 g in small pieces -
fine salt 4 Liffo spoons -

Ratatouille is Provençal and belongs to summer, when peppers, courgettes and aubergines all arrive at once. In the traditional method each vegetable is cooked separately and they are brought together only at the end, precisely because their timings and water content differ. But enough talking — let's go straight to loading the ingredients into Liffo!
Setting up Liffo
Container 1
In the first container put 40 g of extra virgin olive oil, 100 g of yellow onions, coarsely chopped, 8 sprigs of fresh thyme and 2 cloves of fresh garlic, chopped.

In the second container put 180 g of peppers, in large dice.
Container 3
In the third container put 160 g of courgettes, in large dice and 40 g of peppers, in large dice.
Container 4
In the fourth container put 60 g of courgettes, in large dice.
Container 5
In the fifth container put 130 g of aubergines, in large dice.

In the sixth container put 120 g of aubergines, in large dice.
Container 7
In the seventh container put 200 g of peeled tomatoes, in small pieces, 4 Liffo spoons of fine salt and 2 pinches of black pepper, ground.

In the eighth container put 20 g of white wine vinegar.

Tips
Thyme gives character to this recipe, prefer fresh and fragrant thyme. Use both peeled tomatoes and their juice.
Plating
Season to taste with extra virgin olive oil, served raw, thyme leaves, and a pinch of black pepper. Excellent warm or at room temperature, as a side dish but also to accompany white rice or toasted bread slices.
