Cheese and figs is a pairing as old as the countryside: the fig very sweet and faintly tart, the goat's taleggio sharp. The toasted almonds are there for texture, because a risotto with figs risks being soft all the way through. But enough talking — let's go straight to loading the ingredients into Liffo!

Tips
Ideal sweet and ripe fresh figs, peeled. Prefer a semi-aged goat cheese - not too soft - such as taleggio or robiola. Fresh thyme can be replaced by marjoram.
Plating
Season to taste with more sliced almonds and fresh fig wedges.
