Ingredients

  • extra virgin olive oil 20 g
  • white parts of spring onions 60 g in rounds
  • fresh cream 200 g
  • fresh salmon 600 g in chunks
  • fresh dill 4 sprigs chopped
  • fine salt 2 Liffo spoons
  • black pepper 1 pinch
  • lemon juice 30 g

Salmon and dill is the Scandinavian pairing par excellence — the one from gravlax — and it works because dill has an aniseed note that cuts the fat of the fish. The salmon comes off the heat while still faintly pink in the middle: it goes on cooking in the plate. But enough talking — let's go straight to loading the ingredients into Liffo!

Setting up Liffo

Container 1

In the first container put 20 g of extra virgin olive oil and 60 g of white parts of spring onions, in rounds.

In the third container put 300 g of fresh salmon, in chunks, 4 sprigs of fresh dill, chopped, 2 Liffo spoons of fine salt and 1 pinch of black pepper.

Nel terzo contenitore mettete 300 g di salmone fresco a trancetti, 4 ciuffetti di aneto fresco tritato, 2 cucchiai Liffo di sale fino e 1 pizzico di pepe nero.

Container 4

In the fourth container put 300 g of fresh salmon, in chunks.

Nel quarto contenitore mettete 300 g di salmone fresco a trancetti.

Container 5

In the fifth container put 30 g of lemon juice.

Nel quinto contenitore mettete 30 g di succo di limone.

Tips

Use fresh salmon, avoiding cuts that are too small which might fall apart during cooking; ideal are 100 g portions. Dill can be replaced with chives.

Plating

The result is moist, in sauce. Season to taste with grated lemon zest, a few pink peppercorns and chopped dill. It goes great with boiled potatoes, white rice or rye bread.
