Baby spinach goes in last and barely cooks: it loses three quarters of its volume in seconds, and going further makes it watery. The white wine evaporates, taking the alcohol with it and leaving only the acidity, which the salmon needs. But enough talking — let's go straight to loading the ingredients into Liffo!
Setting up Liffo
Container 1
In the first container put 20 g of butter, in medium dice.
Container 2
In the second container put 200 g of thawed peas and 3 Liffo spoons of fine salt.

In the third container put 30 g of dry white wine.

In the fourth container put 240 g of fresh salmon, in medium dice.

In the fifth container put 240 g of fresh salmon, in medium dice.

Tips
Ideal are salmon steaks sized according to the container volume. Avoid cuts that are too small as they risk falling apart during cooking. It is also possible to use thawed salmon.
Plating
Season to taste with a pinch of black pepper. Ideally paired with boiled potatoes, mashed potatoes or white rice.
