Pumpkin and raisins together are an idea that recurs across northern Italian cooking: two different kinds of sweetness, one from a vegetable and one from fruit, held in balance by vinegar or onion. Tips
Ideal pumpkin varieties are sweet and soft-fleshed such as Mantovana, Violina, Napoletana. Wine vinegar can be replaced by balsamic vinegar, which gives a sweeter note.
